About Panzanella:
This is a recipe I make in late summer, when real vine-ripened tomatoes are available. Besides ripe tomatoes, it is important to use a sturdy, dense bread, such as a rustic Artisan or sourdough (white or wheat), ideally from your local bakery. Day-old dense bread is fine for this. Be generous with the basil.
What to do with the leftovers? Combine a cup or two of the bread salad with a couple of beaten eggs for a delicious breakfast omelet the next morning.
Marcella's art is top notch! I am constantly gifting her art prints, cards and stickers - they feel so personal. I also have loved taking her workshops and learning basics in watercolor!
